In honor of the 20th Anniversary of The French Laundry, Mast Brothers Chocolate and Chef Thomas Keller have come together to develop a one-of-a-kind, limited reserve bar. Finding shared sensibilities in how the Mast brothers source and produce their chocolate, with a rigor that borders on obsession, Chef Keller has used their products since he first visited their Brooklyn factory in 2007. As so many of Chef Keller’s dishes capture a certain nostalgia, this bar embodies timelessness with clarity and balance. The beans have been sourced from prestigious farms in Peru and Belize before being delicately roasted, stone-ground and aged. At 75% cacao, the flavor is bold with hints of cinnamon, raisin and red wine.
